Last night during Bible study, a passing comment was made that when an unsaved man dies his body goes into the ground his soul into hell and his spirit back to god who made it. What does he mean by "his spirit goes back to God?" We have never heard that before.
Okay, what does it mean to say that a lost man's spirit goes back to God? Human beings are made up of a spirit, a soul, and a body.
1 Thessalonians 5:23
And the very God of peace sanctify you wholly; and I pray God your whole spirit and soul and body be preserved blameless unto the coming of our Lord Jesus Christ.
The spirit is the part of mankind that is simply the life force that God gave to mankind in order to live and have contact with other spirits like other humans, God, Satan, Angels, etc.
Genesis 2:7
And the LORD God formed man of the dust of the ground [body], and breathed into his nostrils the breath of life [spirit]; and man became a living soul [an individual]
The bible makes it clear that all human spirits go to God at death.
Ecclesiastes 12:7
Then shall the dust [body] return to the earth as it was: and the spirit shall return unto God who gave it.
So when a lost man dies, his body goes into the grave, his soul (the real him) goes to hell, and his spirit goes back to God like all human spirits go.
For us saved people, the Holy Ghost that lives in us takes our soul and spirit to the throne room of God at death.

What do the saints (souls that are saved) do in Heaven in addition to worshiping the Lord 24/7? Are they given assignments?

so if we go to heaven when we die (Christians) who will be the dead in Christ that are resurrected to go to heaven with the Lord when He comes (1st Thessalonians 4:16 & john 5 :28,29).
